If you're anything like me during the fall months, you love all things pumpkin. Come to think of it, I love pumpkin any time of the year ;)
And these muffins are at the top of my favorites list when it comes to pumpkin-flavored treats.
Pumpkin Muffins
Servings: 8
Ingredients
¾ cup pumpkin puree
¼ cup coconut sugar
3 eggs
1 tsp vanilla extract
1 ½ cups almond flour
1 tsp baking soda
⅛ tsp sea salt
½ tsp cinnamon
1 ½ tsp pumpkin pie spice
¼ cup chocolate chips (optional)
Directions
Preheat oven to 350°F. Grease 8 cups of a muffin pan of line with paper muffin liners.
Combine all ingredients in a large bowl; stir to mix well.
Divide batter between the 8 prepared muffin cups.
Bake for 15-25 minutes, until the tops are firm and a toothpick inserted in the center of a muffin comes out clean.
